BARBECUED RUM CHICKEN
Ingredients:
- Chicken - 500 gm (cut into pieces)
- Oil - 2tbsp
- Dark Rum - 80 ml
- Honey - 1 tbsp
- Fresh Lime juice - 1 tbsp
- Tomato sauce - 3 tbsp
- Garlic - 1 tbsp (chopped)
- Soy Sauce - 1 tbsp
- Cloves - 3
- Worcestershire sauce- 30 ml
- Tabasco sauce- 1 tbsp
- Black pepper - 2 tsp
- Red Chilli and Salt to taste
Recipe Direction:
- In a large bowl mix all the ingredients (expect chicken, rum and oil) and apply to the chicken pieces. Keep in the refrigerator for 1 hour.
- Keep the chicken pieces on the microwave rack to grill. Apply oil and microwave (micro + grill) for 10 to 15 minutes. Keep on turning the pieces until done.
- Serve the grilled chicken with salad. Before serving, heat the rum slightly and pour over it. Serve hot with barbecue sauce.
