 STUFFED TOMATOES WITH SPICY CHICKEN MASALA


Ingredients:

  • Medium sized firm tomatoes - 10
  • Oil or Butter - 2 tbsp
  • Mint leaves - 1/4 cup (finely chopped)  
  • Celery - 2 tbsp (finely chopped)  
  • Coriander leaves - 2 tbsp (finely chopped)  
  • Salt and Pepper to taste

For Stuffing:

Spicy chicken dry masala  - 1 cup

For Garnish:

  • Dry breadcrumbs -2 tbsp

Method:

Cut the stem ends of all the tomatoes and scoop out the pulp. Invert to drain, whilst the stuffing is being prepared.

Mix all the ingredients together except bread crumbs and butter, moistening them with a little of the tomato pulp. Stuff the tomatoes and place on a serving dish.

Sprinkle bread crumbs on top and dot them with butter. Microwave for 20 to 30 minutes.Serve hot with tomato sauce or egg mayonnaise.
