 BUTTER CHICKEN


 

 

Ingredients:

  • Chicken -1kg (thigh fillets)
  • Oil or Ghee - 3 tbsp
  • Fresh Lemon Juice - 3tbsp
  • Ginger and Garlic Paste - 4tbsp
  • Yogurt - 1/2 cup
  • Coriander seeds - 1/3 cup
  • Cinnamon -1 Stick (2 inches)
  • Black Cardamom - 3 nos.
  • Cloves - 4nos.
  • Turmeric powder - 4 tsp
  • Chilli powder - 4 tsp
  • Paprika - 3tsp
  • Nutmeg - 1 tsp (ground)
  • Salt to taste

 Sauce:

  • Oil and melted unsalted butter - 1/2 cup
  • Onions -7 (chopped)
  • Ginger  - 3 tsp (grated)
  • Garlic - 3 tsp (crushed)
  • Chilli Powder - 3tsp
  • Turmeric Powder - 4 tsp
  • Fresh Green Chilli - 4 tsp (chopped)
  • Tomato puree - 1/2 cup
  • Fresh Cream - 2/3 cup
  • Honey - 5 tsp
  • Dried Fenugreek leaves - 3tbsp
  • Fresh coriander leaves - 5 tbsp
  • Salts to taste.

Recipe Direction:

  • Cut the chicken pieces into quarters and mix with lemon juice and keep aside.
  • Grind coriander seeds, cinnamon, cardamom and cloves to a coarse powder. Add turmeric , chilli powder, paprika, nutmeg, lemon juice, yogurt, garlic, ginger and oil mix well.
  • Season the chicken with salt. Mix well and marinate place it in the refrigerator for 50 minutes.
  • Preheat the oven 500°C coat the pan with oil and place the chicken pieces in a single layer. Bake for 10 to 20 minutes. Remove the pan from oven and keep it aside.

Sauce Preparation:

  • In a large pan heat oil and butter mixture in a low flame add onions one tsp salt and cook, uncovered and keep stirring until onions become golden brown color.
  • Add ginger garlic paste and stir for 5 minutes add chilli powder, turmeric and chilli pepper for a minute. Add tomato puree and keep stirring until 10 to 15 minutes.
  • Add cream and butter keep stirring until butter melts. Add chicken, honey and fenugreek and keep stirring until the chicken is cooked enough.
  • Garnish with fresh coriander leaves and fresh cream. Serve hot.
