 NUTTY CHICKEN RECIPES

 

Ingredients:

  • Chicken - 300 gm (mince)
  • Pistachio nuts - 75 gm  (finely crushed)
  • Egg whites - 3 (beaten)
  • Fresh lemon juice - 1tbsp
  • Flour  - 2 tbsp (maida)
  • Almonds - 150 gm (blanched)
  • Dried breadcrumbs - 1 cup
  • Salt and pepper to taste

For Lemon Sauce :

  • Chicken Stock - 200 ml
  • Fresh lemon juice - 2 tbsp
  • Cream cheese - 1 cup
  • Fresh coriander leaves  - 1 tbsp (finely chopped)

Recipe Direction:

  • In a large bowl mix the chicken mince with the salt, pepper, pista nuts, fresh lemon juice and beaten egg whites.
  • Shape this mixture into a small balls coated with flour. Roll the balls in one egg white and coat them first with almonds and then with dried breadcrumbs.
  • Preheat the oven to 100°C . Place the balls on a greased baking tray and bake for 20 to 30 minutes till the chicken is cooked and the balls are golden brown and crisp.

Lemon Sauce:

  • Mix all the lemon sauce ingredients together and microwave at 60% power for 5 to 10 minutes.
  • Serve the Lemon sauce with chicken balls.
