CHICKEN SHASHLIK


Ingredients:

  • Boneless chicken - 500 gm
  • Ghee or oil - 1 to 2 tbsp
  • Curd - 2 tbsp
  • Capsicum - 1 (cut into one inch pieces)
  • Onions - 2 (cut into one inch pieces)
  • Tomatoes -2 (cut into one inch pieces)
  • Pineapple - 8 to 10 pieces (cut into one inch pieces)
  • Salt to taste
  • Wooden skewers - 10

Ground into Paste:

  • Mint leaves - 1/4 cup
  • Coriander leaves - 1/2 cup
  • Ginger - 1 inch piece
  • Lemon juice - 1/2 tbsp
  • Garlic - 2 to 3 flakes

Method:

Preheat the microwave to 100 °C. Soak wooden skewers in water for 30 minutes.

Marinate chicken with ground paste, curd, salt and  2 tsp of oil or ghee for 1 to 2 hours.

Add the lemon juice  right before grilling.

Microwave the marinated chicken mixed with 1 tbsp of oil or ghee for 5 to 10 minutes stirring in between.

On wooden skewers arrange a piece of  chicken, capsicum, pineapple, onion and tomato alternately and place them on a plate.

Brush with remaining oil and microwave for 10 minutes or more, basting them with the rest of the oil.

Then place the skewers on a bed of white rice or saffron rice or chapati. Serve hot  immediately.
